A creamy, comforting dessert with tender banana slices, custard, and a crunchy wafer topping — perfect for any occasion.
Ingredients (serves 6–8):
- 3 large eggs
- 1 3/4 cups sugar
- 1/3 cup cornstarch
- 2 1/2 cups almond milk (or regular milk)
- 1 tsp vanilla extract
- 80 vanilla wafers
- 5 ripe bananas, sliced
- 1/4 tsp salt
- 1 cup Greek yogurt (optional topping)
Instructions:
Chill for at least 2 hours before serving. Top with Greek yogurt if desired.
Preheat oven to 325°F.
In a saucepan, whisk together egg yolks, sugar, cornstarch, and salt. Slowly add almond milk, whisking constantly. Cook over medium heat until thickened into a smooth custard. Remove from heat and stir in vanilla.
In a serving dish, place a layer of vanilla wafers, then a layer of banana slices. Pour a portion of custard over the top. Repeat layers until all ingredients are used, finishing with custard.
Whisk egg whites with a pinch of salt until soft peaks form. Spread on top of the pudding, then lightly toast in the oven for 5–8 minutes until golden.
