Ingredients
- 4 large baking potatoes
- 3 tablespoons unsalted butter
- 3 ounces Gouda cheese, cut into thin slices
- 3 1/2 ounces grated Parmesan cheese
- 3 1/2 ounces creamy Gorgonzola
- 1 1/2 tablespoons sour cream (10% fat)
- 3 hot dogs or smoked sausages, chopped
Instructions
Preheat your oven to 400°F. Clean the potatoes well and make an “X” cut on the top of each. Rub butter all over them, then wrap each potato tightly in foil. Bake for 30 to 45 minutes, or until soft when pierced with a fork.
While the potatoes are roasting, combine sour cream with the Gorgonzola cheese. Season with salt and pepper if you like. Grate the Parmesan cheese and slice the Gouda into strips. Chop the hot dogs into bite-sized pieces.
Once the potatoes are baked, carefully open the “X” tops and gently press the sides to expand the opening. Scoop out some of the inside potato flesh and mix it into the sour cream and Gorgonzola mixture. Fill the potato cavities with this creamy blend, then add slices of Gouda and the chopped hot dogs. Sprinkle the Parmesan over the top.
Return the stuffed potatoes to the oven, uncovered, and bake for another 10 minutes or until the cheese is melted and lightly browned.
