Ingredients (Serves 4):

  • 1.3 pounds cooked potatoes, peeled and sliced
  • 3/4 cup sour cream
  • 1 egg
  • 1.1 pounds mushrooms (white or cremini), sliced
  • 1/2 cup cooking cream (or heavy cream)
  • 1 garlic clove, minced

  • 3.5 oz shredded hard cheese
  • 2/3 cup instant vegetable broth
  • 2 tablespoons butter
  • Salt and black pepper, to taste

Instructions:
Boil potatoes in their skins for about 25 minutes, rinse with cold water, peel, and let cool. Slice thinly. Sauté onion and garlic in butter, add mushrooms and cook gently. Pour in the broth and simmer. Stir in sour cream and cooking cream, season, and remove from heat. Beat in the egg. Grease a baking dish and sprinkle with breadcrumbs. Layer half of the potatoes, then top with half the cheese and some of the mushroom sauce. Repeat with the remaining potatoes and sauce. Bake at 400°F for 20 minutes. After 10 minutes, sprinkle remaining cheese on top and bake until golden brown.

Creamy Mustard Potatoes with Bacon and Tomatoes
Ingredients (Serves 6):

20 small potatoes

2 tablespoons flour

7 oz cherry tomatoes

4 onions, sliced

1 2/3 cups milk

9 oz smoked bacon, chopped

2 tablespoons butter

7 oz shredded cheese

Salt and pepper, to taste

2 tablespoons mustard

1 teaspoon seasoning salt (like Vegeta or all-purpose seasoning)

Fresh thyme and chives

Optional: Cheese-flavored tortilla chips for topping

Instructions:
Sauté onions in butter over low heat until translucent. Add mustard and flour, stir, and pour in the milk, stirring constantly to avoid lumps. Stir in cheese until melted, then remove from heat. Cut potatoes into quarters (or eighths if larger) and place in a baking dish. Add bacon and tomatoes, season with salt and pepper. Pour the creamy onion mixture over the potatoes and mix gently. Cover with foil and bake at 400°F for 30 minutes. Remove foil, stir, reduce heat to 350°F, and bake for another 30 minutes or until potatoes are tender. For extra flavor and crunch, top with crushed cheese tortilla chips in the last 10 minutes of baking. Serve as a main with salad or as a hearty side dish.
