Porcini mushrooms are incredibly flavorful and lend a rich, earthy taste to any dish. In this recipe, they’re paired with smoked bacon, creamy sauce, and crispy rye bread for a comforting and delicious meal.

Ingredients:

  • 14 oz (400 g) fresh porcini mushrooms
  • 3 shallots or 1 medium red onion
  • 7 oz (200 g) smoked bacon
  • ½ cup (4 fl oz/100 ml) sweet wine
  • A small bunch of parsley
  • 5 oz (150 g) butter
  • 8 slices of rye bread
  • 2 tbsp all-purpose flour
  • 1 ¼ cups (10 fl oz/300 ml) milk
  • ½ cup (4 fl oz/100 ml) heavy cream
  • Salt
  • Black pepper
  • Nutmeg

Instructions:

Step 1: Sauté the Mushrooms

  • In a large skillet, melt a bit of the butter over medium heat.
  • Add the diced bacon and sauté until golden.
  • Stir in finely chopped shallots (or red onion) and sliced porcini mushrooms.
  • Cook gently, adding a splash of sweet wine like Prosecco. Season with salt and pepper.
  • Sprinkle with finely chopped parsley.

Step 2: Prepare the Sauce

  • In another pan, melt a small amount of butter over medium-low heat.
  • Add the flour and stir, making sure it stays light in color.
  • Gradually pour in the milk while whisking continuously until the mixture thickens into a smooth sauce.
  • Grate in a little nutmeg, add salt to taste, and mix in the heavy cream.

Step 3: Assemble and Bake

  • Preheat the oven to 400°F (200°C).
  • Generously butter a baking dish.
  • Layer the bottom with thin slices of rye bread.
  • Spread the sautéed bacon and mushrooms on top, then pour the sauce evenly over everything.
  • Bake for about 15 minutes, or until golden and bubbly.

Optional Additions:

  • Add bits of prosciutto or shredded cheese for extra flavor.
  • Pair with seasonal vegetables for a complete meal.
