Porcini mushrooms are incredibly flavorful and lend a rich, earthy taste to any dish. In this recipe, they’re paired with smoked bacon, creamy sauce, and crispy rye bread for a comforting and delicious meal.
Ingredients:
- 14 oz (400 g) fresh porcini mushrooms
- 3 shallots or 1 medium red onion
- 7 oz (200 g) smoked bacon
- ½ cup (4 fl oz/100 ml) sweet wine
- A small bunch of parsley
- 5 oz (150 g) butter
- 8 slices of rye bread
- 2 tbsp all-purpose flour
- 1 ¼ cups (10 fl oz/300 ml) milk
- ½ cup (4 fl oz/100 ml) heavy cream
- Salt
- Black pepper
- Nutmeg
Instructions:
Step 1: Sauté the Mushrooms
- In a large skillet, melt a bit of the butter over medium heat.
- Add the diced bacon and sauté until golden.
- Stir in finely chopped shallots (or red onion) and sliced porcini mushrooms.
- Cook gently, adding a splash of sweet wine like Prosecco. Season with salt and pepper.
- Sprinkle with finely chopped parsley.
Step 2: Prepare the Sauce
- In another pan, melt a small amount of butter over medium-low heat.
- Add the flour and stir, making sure it stays light in color.
- Gradually pour in the milk while whisking continuously until the mixture thickens into a smooth sauce.
- Grate in a little nutmeg, add salt to taste, and mix in the heavy cream.
Step 3: Assemble and Bake
- Preheat the oven to 400°F (200°C).
- Generously butter a baking dish.
- Layer the bottom with thin slices of rye bread.
- Spread the sautéed bacon and mushrooms on top, then pour the sauce evenly over everything.
- Bake for about 15 minutes, or until golden and bubbly.
Optional Additions:
- Add bits of prosciutto or shredded cheese for extra flavor.
- Pair with seasonal vegetables for a complete meal.
