Baked hake fillets ingredients:
1/2 kg of frozen hake fillets,
1/2 or 1 dl of olive oil,
3-4 cloves of garlic,
some rosemary,
2-3 bay leaves,
1 tablespoon of butter,
1 small onion,
1 flat spoon of flour,
2 spoons of cognac,
1 sweet cream,
1 chicken cube,
1 teaspoon of tomato concentrate,
salt,
pepper.
Defrost the hake fillets and roll them up, then place them in a dish in which you can bake them in the oven.
Mix 1/2 or 1 dl of olive oil (if you don’t have olive oil, you can use mixed or ordinary sunflower oil), a lot of garlic, a little rosemary and 2-3 bay leaves.
Pour this mixture over the hake.
In another pot on the stove, simmer 1 tablespoon of butter and 1 small onion, finely chopped.
When the onion is smothered, take it off the heat and add 1 level spoonful of flour and 2 spoonfuls of cognac (some other alcohol can also be used). Return to the heat and stir for a few more minutes, it will be quite thick, so you have to stir constantly so it doesn’t burn.
Remove from heat again, add 1 sweet cream, 1 chicken cube and a teaspoon of tomato concentrate. Return to the heat and stir until the cube dissolves. When the cube melts, remove from heat, add salt and pepper and the sauce is ready.
Pour this sauce over the hake and put it in the oven for about 40-50 minutes at 180 degrees Celsius.
Remark:
I first turn on the oven to heat it to 200 degrees C, so that it is hot when I put the hake in, then reduce it to 180 degrees C and bake.
Instead of sweet cream, I put regular sour cream (from 2 dl), dilute it with a little milk and add 2 tablespoons of sugar.
Boiled rice goes well with this dish as a side dish.
The dish is quite spicy, it seems complicated to prepare, but it is actually very simple, only the baking takes a little time.
