Ingredients:
- Several potatoes, sliced thinly
- 2-3 tablespoons of rice (about 60% cooked)
- Olive oil
- Seasoning (vegetable seasoning, salt, pepper, and any herbs that pair well with fish)
- Warm water
Instructions:
- Slice the potatoes thinly and set them aside. In the meantime, cook the rice until it is about 60% done.
- In a baking dish, layer the sliced potatoes and partially cooked rice. Drizzle with olive oil and season with your preferred herbs and spices. Add warm water to cover the potatoes, then cover the dish with foil.
- Bake in the oven at 300°F (150°C) for about 15 minutes. After that, remove the foil and add your fish—whole or filleted. You can use larger fish like haddock, sea bass, or other similar types. Sardines and smaller fish aren’t ideal for this dish.
- Cover with foil again and return to the oven for another 10-15 minutes.
- After that, remove the foil, increase the temperature, and bake for another 10 minutes to get a crispy top.
- The dish is done when the water has evaporated from the potatoes, and nothing is sticking to the bottom of the dish.
For the sauce, mix a few tablespoons of homemade olive oil with a generous amount of chopped parsley and garlic.
