So tender, flavorful, and golden brown—you might mistake them for a roast! These chicken schnitzels are filled with creamy spinach and melted cheese, then baked until perfectly crisp. It’s a dish that looks like a masterpiece and tastes even better. A true family favorite!

Ingredients

2 large boneless, skinless chicken breasts

1 teaspoon seasoned salt (or your favorite chicken seasoning)

½ teaspoon ground black pepper

3.5 ounces (100 g) thinly sliced ham

3.5 ounces (100 g) semi-hard cheese like Gouda or provolone

2 ounces (about ½ cup) fresh spinach, chopped (or use thawed frozen spinach, well-drained)

2 tablespoons cream cheese or cooking cream

2 spinach blocks (frozen spinach bricks, thawed and drained)

2 large eggs

2 tablespoons all-purpose flour

4 cups breadcrumbs or coarsely crushed soy flakes

1 garlic clove, minced

2 tablespoons vegetable oil

Optional: ¼ cup shredded cheese or thin slices of bacon for topping

Instructions

Slice each chicken breast horizontally to create flat cutlets. Place between two sheets of plastic wrap and pound gently to flatten. Season both sides with seasoned salt and black pepper.
In a bowl, mix the chopped spinach with cream cheese or cooking cream and the minced garlic.
Spread the spinach mixture over each schnitzel. Top with one slice of ham and one slice of cheese. Fold the schnitzels in half to enclose the filling.
Coat each piece first in flour, then dip in beaten eggs, and finally press into breadcrumbs or crushed soy flakes until well coated.
Arrange on a greased baking sheet. Optionally top with shredded cheese or thin strips of bacon for extra flavor. Drizzle lightly with oil.
Bake at 410°F (210°C) for about 45 minutes, or until golden and crispy.
