Discover a healthy and flavorful twist on classic stuffed peppers! This recipe combines lean ground turkey, wholesome grains, and fresh vegetables, baked to perfection and topped with melted cheese. Perfect for a hearty weeknight dinner or a family-friendly meal that’s both nutritious and delicious.

Ingredients:

1 oz seasoning mix for stuffed peppers

10.5 oz ground turkey

¼ cup uncooked pearl barley

¼ cup corn kernels (fresh, frozen, or canned)

3 large red bell peppers

½ cup shredded cheese (any mild melting cheese)

Directions:

Preheat your oven to 400°F.

In a small bowl, mix the seasoning packet with 3 tablespoons of warm water and let it hydrate for a few minutes.

In a larger bowl, combine the ground turkey, cooked barley, corn, and the hydrated seasoning mixture. Stir until everything is evenly blended.

Cut the bell peppers in half lengthwise and remove the seeds and membranes.

Spoon the turkey and grain mixture into each pepper half. Top each with shredded cheese.

Lightly grease a baking dish and arrange the stuffed peppers inside.

Bake for about 45 minutes, until the peppers are tender and the filling is fully cooked.

Serve warm, paired with boiled or roasted potatoes if desired.
