Hearty Minestrone Soup –
Yield: 4 Servings
1 tb Oil
1 Onion, diced
1 Potato, diced
1 Carrot, diced
1 ts Garlic Stock Powder
1 pk Maggi Tomato Soup Mix
4 c Water
1/4 c Spiral Pasta
1/2 c Cabbage, finely sliced
2 Frankfurters, skinned &
-sliced Heat oil in a large saucepan. Add onion, potato & carrot. Cook,
stirring, for 2-3 minutes. Combine stock powder, soup mix & water;
add to pan. Bring to the boil, stirring, then simmer for 10 minutes.
Add pasta, cabbage & frankfurters. Cook for a further 7-8 minutes.

Tomato & Basil Soup

Yield: 4 Servings
1 tb Olive Oil
1 lg Onion, finely chopped
1 1/2 kg Tomatoes, roughly chopped
50 g Pottle Tomato Paste
1 tb Vegetable Stock Powder,-dissolved in
4 c Hot Water
1/2 c Basil Leaves
Salt & Pepper, to taste
Turkish Bread, to serve
Heat oil in a large pan, add onion & cook for 5 minutes over medium heat. Add tomatoes & tomato paste, cover & cook for 15 minutes, stirring occasionally. Add stock & most of the basil leaves (save a few for garnishing), & cook a further 5 minutes. Place the soup in batches in a food processor & process for 20 seconds, or until the soup is smooth. Strain through a large sieve, if desired, & return to pan. Reheat the soup, adding salt & pepper to taste. Pour the soup into serving bowls & garnish with remaining basil leaves. Serve with Turkish bread. Serves 4.
