MARINATED CHICKEN Ingredients:
1 c. soy sauce
1/3 c. lemon juice
1/4 c. dry sherry or wine
1/4 chopped green onion
1 garlic clove Pinch of pepper
Procedure:
Combine all ingredients in a glass or ceramic container and mix well. Marinate chicken for 12 to 24 hours then either grill or broil. Makes enough for 4 to 6 pieces of chicken.

Chicken Veggie burger

Ingredients:
200 grams ground chicken
½ cup button or Shitake mushrooms, minced
1 cup grated Carrots
1 cup Malunggay leaves, chopped finely
2T minced garlic
1T salt
Freshly ground pepper
1T cooking oil
1 cup Guraman puree
1 cup Squash, shredded
½ cup flour
Procedure:
1.Combine chicken, Mushrooms, Squash, Carrots, Malunggay, flour and garlic in a bowl. Season with salt and pepper.
2.Use your hands to form patties about ¼ inch bigger than the burger bun.
3.Drizzle oil in a non stick pan. Fry burger patties. Once side is golden brown flip over patty to cook the other side. Do not press down on the patties with your spatula, this will make them dry.

Spicy Chicken and Pasta Stew
4 oz bow tie or penne pasta, uncooked
2 tsp olive oil
3/4 lb skinned, boned chicken breast halves
2 tsp minced garlic (about 4 cloves)
1 16oz can no-salt-added chicken broth
1 14 1/2oz can Italian-style stewed tomatoes, undrained
1/2 tsp dried, crushed red pepper
2 cups tightly packed torn fresh spinach leaves
1/4 cup grated Parmesan cheese
Cook pasta according to package directions, omitting salt and fat; drain and set aside. While pasta cooks, heat oil in a large saucepan over medium-high heat until hot. Meanwhile, cut chicken into 1-inch pieces. Add chicken and garlic to pan; cook 5 minutes or until chicken is done, stirring occasionally. Add broth, tomatoes, and crushed pepper; bring to a boil. Reduce heat, and simmer, uncovered, 5 minutes. Add pasta and spinach to pan. Cook 2 minutes, or until spinach wilts, stirring occasionally. Ladle stew into individual bowls; sprinkle with cheese.
