Preparation
Pour the flour onto the table, add the yeast that you previously mixed with a spoonful of sugar and stir in 2.5 dl of lukewarm water. Pour 8 tablespoons of olive oil, a teaspoon of salt and knead until you get a compact mass. Wrap the dough in transparent foil and let it rest for 60 minutes at room temperature. Cut the onion into rings and sauté for about 3 minutes in a little hot oil. Add salt, pepper, pour 4 tablespoons of water, cover and cook for about 10 minutes at a moderate temperature. Then add drained capers, chopped anchovies, pine nuts. halved olives, grated goat cheese, mix everything well and remove from the stove. Cut the resulting dough in half into two equal parts, thin it out with a rolling pin to get 2 circles with a diameter of 30 cm and a thickness of 4 mm. Line a shallow, round tray with baking paper, grease it with oil, sprinkle with flour and place one round of dough on top of the paper. Spread the vegetable filling evenly on top, cover with another circle of dough. Roll the dough around the edge of the pan and poke the dough with a fork in several places. Mix two tablespoons of oil with two tablespoons of water and a little salt, then pour this mixture over the dough. Bake for 30 minutes in an oven heated to 180 degrees Celsius. Serve warm.
