Ingredients:
450 g of potatoes,
300 g of young cheese,
60 g of buckwheat flour,
2 eggs,
nutmeg,
cooking oil,
lemon balm leaves,
salt.

The best type of potato for frying is yellow, because it absorbs less oil during frying. Wash the potatoes well, then put them in boiling water and cook for about 30 minutes. When it is cooked, peel it and make mashed potatoes out of it. Then put cheese in it, add buckwheat flour, one egg and one yolk. Add salt, nutmeg and lemon balm leaves. Beat the egg whites and mix them into the potato mixture. Then form small patties and fry in hot oil. When the burgers turn golden yellow, remove them from the oil and serve on a plate.
