Fried Chicken Salad

Ingredients:

400–500 g of chicken meat,

2 eggs,

150–200 g of sour cream,

2–3 fresh cucumbers,

2 bunches of leeks,

salt,

ground black pepper,

mustard.

Fried Chicken Salad Cooking method.

Rinse the processed chicken, then dry it, season with salt and pepper. Place in the oven to roast until done. Now boil hard-boiled eggs, cool them and chop them.
After that, cut the fried chicken meat, cucumbers and mix everything with chopped eggs. Then add spices (mustard, pepper and salt) to the dish, mix everything, season with sour cream. Top the salad with finely chopped leek.

Grilled Chicken with Tomato Sweet Red Pepper Sauce
Sauce:
1 tbs olive oil
1/2 c diced red bell pepper
2 tsp minced garlic
1 14 1/2 oz. can diced tomatoes with juice
1/2 c sun dried tomatoes coarsely chopped
2 tbs minced flat leaf parsley
2 tbs minced fresh basil
1/2 tsp somersweet or splenda
1/4 tsp red pepper flakes
1/4 tsp pepper or to taste
Other:
1 tbs olive oil
4 boneless breasts
(optional: garnish with fresh ground black pepper, freshly grated parmesan cheese, chevre cheese, sprigs of
parsley).
To prepare sauce, heat oil in a medium saucepan over medium-high heat. Add the bell pepper and garlic; cook
stirring occasionally for about 3 min. or until the pepper begins to soften. Stir the remaining sauce ingredients,
except for the fresh basil into the pan. Reduce the heat to medium-low; cover and cook, stirring occasionally for
about 10 min. or until the bell pepper and sun-dried tomatoes are tender. Add the fresh basil during the last few
min. Adjust the seasoning to taste. While the sauce is cooking heat a stovetop grill pan over high heat. Brush one
side of the chicken with about half the olive oil. Reduce the heat to medium-high and arrange the chicken on the
grill, oiled side down; cook for about 5 min. Brush the top surface with the remaining oil; turn and continue to cook
for about 5 min. or until the chicken is lightly browned and cooked through. Serve the chicken with the warm
sauce poured over the top and some steamed veggies and a green salad. Posted by risingangel.
