Stir fry white rice and egg rolls
5Tbs soy sauce,
2 cloves garlic,
3tsps ginger root,
1lb chicken breast, cubed
2 tsps vegetable oil
4oz unsalted roasted peanuts
1 red bell pepper,
1/4 cup green onions,
3/4 cup chicken broth
2tsps cornstarch

Cooking instructions
Take a large zipper bag combine soy sauce, garlic and ginger root. Then blend well and add chicken to marinate for at least 20 minutes. After that in a skillet, heat oil over med heat. Add peanuts and cook stirring f until they are lightly browned. Remove it and set aside. Cook chicken in skillet. Cook till brown 3 minutes and set aside with peanuts. Put bell peppers and onions to skillet and cook 2 minutes. Mix broth, cornstarch and marinade. Add to skillet. Use a wisk to dissolve cornstarch. Then add chicken and peanuts. Cook stirring constantly until mixture comes to a boil and thickens. Serve it over white rice, throw in egg rolls and enjoy!
