GLUTEN FREE PIZZA DOUGH
¼ cup water, at room temperature
2 large eggs, at room temperature
1 egg white, at room temperature
3 tbsp. olive oil
1½ cups tapioca flour
1 cup white rice flour
1 cup brown rice flour
½ cup potato starch
1 tsp. salt
1 tbsp. sugar
1 tbsp. xanthan gum
2 tbsp. bread machine yeast
GLUTEN FREE PIZZA DOUGH PREPARING
Measure ingredients into bread pan in the order listed.Insert bread pan securely into baking chamber; close lid. Plug unit
into wall outlet.
Select DOUGH. Press the START/STOP button.
The complete signal will sound when dough is ready.
Using pot holders remove bread pan from baking chamber and
place dough on a lightly floured surface.
Divide dough into 3 equal portions. Set 2 pieces aside and keep
covered. Lightly brush 3, 12-inch pizza pans with olive oil and
sprinkle with cornmeal; set aside. Place 1/3 of dough on prepared
pizza pan and gently press the dough to cover the bottom of the pan
evenly. Bake in preheated oven at 425ºF for about 15 minutes.
Top with desired topping ingredients such as sauce, cheese and
vegetables. Return to oven and bake for 12 minutes or until edges
are golden and cheese is bubbling.
Repeat with remaining dough.
