Mediterranean pasta salad –

Tomato-paprika salad with tuna
Serves 4:
1 tin artichokes (240 g)
1 tin tuna in oil (200 g)
3 big tomatoes
1 cucumber
1 green paprika (pepper)
2 onions
85 g black olives
8 peperoni (hot peppers)
Aceto Balsamico (special vinegar)
olive oil
1 teaspoon mild mustard
sugar preparation: Cut tomatoes, cucumber, paprika and onions
in slices, add pieces of artichokes, tuna, olives and
peperoni. Make a saladsauce with vinegar, mustard,salt
sugar, pepper and oil. Spoon sauce over the other ingre-
dients. Wait for about one hour before serving the salad.

Noodle salad with tuna mayonnaise

Thunfisch-Nudelsalat mit Cheddar und Tomaten

ingredients for 15 persons:
500 g noodles
mayonnaise for salad (40% fat)
250 g yoghurt
300 ml cream
200 ml milk
60 g capers
2 cans with tuna
2 small tins peas
500 g red onions
1 kg tomatoes


Cook noodles in salt water “al dente”.
Chop onions and tomatoes. Mix noodles, onions, tomatoes
and peas. Make a purree of tuna and mayonnaise using
a mixer. Stir cream, yoghurt and milk under the tuna
mayonnaise. Season with salt and pepper and spoon
the sauce over the salad.

1 cup of vinegar
1 teaspoon of salt, pepper and mustard
1 teaspoon of sugar
1 teaspoon of butter

Let it come to a boil.
Stir in two eggs and let thicken.
Then stir in the salmon.
