Raspberry cake that is eaten at weddings for good luck (RECIPE)

Raspberry cakes are a favorite summer treat.

Now is the time to use fresh raspberries for cakes.

Ingredients needed for the crust:

  • 4 egg whites
  • 200 g of sugar
  • vanilla sugar
  • 200 g of flour
  • 1/2 bag of baking powder
  • 80 ml of water
  • 80 ml of oil

For the filling:

  • 4 egg yolks
  • 2 vanilla puddings
  • spoon of starch
  • 6 spoons of sugar
  • 600 ml of milk
  • 150 g of margarine
  • 3 tablespoons of powdered sugar
  • 150 ml of sweet cream
  • 500 g of fresh raspberries

For decoration:

  • 350 ml of sweet cream
  • raspberries

Raspberry cake preparation:

Mix 100 g of sugar, vanilla sugar, water, oil and beat briefly with a mixer, then add flour mixed with baking powder and beat until combined. In another bowl, beat the egg whites with a little salt, gradually adding the remaining sugar. Beat into stiff snow and add to the previous mixture. Pour the crust mixture into a round pan and bake at 180 degrees for about half an hour.

Pour a little milk over the cooled cake.

Beat egg yolks with sugar, add pudding powder, thickener and 200 ml of milk, then mix everything well. Bring the remaining milk to a boil, then pour in the pudding with egg yolks and cook. Beat the margarine with powdered sugar and add to the cooled cream and beat until foamy. Whip the sweet cream and add it to the filling.

Pour a little milk over the cooled crust, then apply half of the filling, then the raspberries cut in half, and the remaining cream over them. Decorate the cake with whipped sweet cream into which you have added some raspberries to give it a pink color and arrange the raspberries on top.
