To celebrate a special occasion, today we provide you with the right recipe: the Raffaello Cake. It takes its name from the famous chocolate and in fact it is a triumph of white chocolate and coconut. A refined and unique cake, a concentrate of goodness that is suitable for a birthday, or for a moment with friends. It will surely be appreciated by children.


Sponge cake: 1
Mascarpone: 500 gr
Cream: 250 ml
White chocolate: 300 gr
Wafer: 175 gr
Milk: 200 gr
Coconut flour: 120 gr
Water: 250 ml
Rum: 2 tablespoons
Sugar: 1 tablespoon
Lemon: 1

Recipe and preparation

Here are the instructions.

Put the cream in a saucepan and bring it almost to a boil then add the white chocolate and let it melt. Meanwhile, put the mascarpone in a bowl and add the condensed milk, mixing them well.

When the chocolate and cream mixture has cooled, add it to the mascarpone along with the crumbled wafers. Prepare a syrup by mixing water, rum, sugar and lemon peel.

Cut the sponge cake into 2 discs, wet it with half of the prepared syrup and fill it with 1/3 of the cream. Cover with the second disc, wet it with the remaining syrup and cover it with the remaining cream.

Store in the fridge.
