Cake with plums in oil
The ingredients must be at room temperature:
2/4 cups of sugar
1 vanilla sugar
1 1/4 cup plain flour
1/4 cup of potato flour
1 teaspoon of baking powder
pinch of salt
1/2 cup canola oil
peel grated from 1 lemon
500 g plums
Wash the plums, remove the stones, if the fruit is large, cut into quarters. Set aside.
PREPARATION OF DOUGH
Mix the eggs at medium speed with a pinch of salt. When they start to foam, add sugar and vanilla sugar. Mix at high speed until a light, fluffy mass is formed.
Combine flour, baking powder and lemon zest and mix.
Pour the flour into the egg mass and mix thoroughly, at the end pour in the oil and mix for a short while. Then mix the dough thoroughly with a kitchen spatula.
Baking form (for me 20-25 cm, but it can be a bit larger) line baking paper.
Preheat the oven to 175 degrees C. with hot air.
Put the dough into a mold.
Arrange the plums tightly, lightly press them into the dough.
Bake the dough for 30-35 minutes until the stick is dry.
Baked, remove and cool in a form on a grill for 15 minutes, then remove and cool completely.
The plum cake can be iced or sprinkled with powdered sugar.
