Potato salad with olives

Ingredients for the “Potato salad with olives” recipe:
Potatoes – 3 pcs.
Olives – 100 gr.
Pickled cucumber – 1 pc.
Red onion – 1/2 pc.
Olive oil – 5 tablespoons
Parsley (or cilantro) – 40 gr.
Salt (to taste) – 2 gr.
Pepper (to taste) – 2 gr.
Lemon – 1/4
Mustard – 1 tsp
Servings: 4
How to cook the dish ” Potato salad with olives “
Wash, peel and boil the potatoes. Cut into cubes, but do not grind, otherwise you will get a homogeneous mass.
Peel and chop the red onion into half rings or quarters. Instead of red onions, you can use white salad or Yalta onions.
Cut the olives in half lengthwise.
Cut the cucumber into small cubes. Pickled cucumbers or gherkins can be used instead of pickles. Mix all ingredients.
Mix olive oil and mustard in a separate cup, squeeze out the juice of a quarter of a lemon, beat everything well with a fork. It is better to use not spicy mustard. You can use lime instead of lemon.
Chop parsley. Add to vegetables, salt and pepper everything, pour with dressing and mix well.
A simple and satisfying salad that can be served hot or cold. Fast and tasty is the motto of this dish! You can experiment with the flavor by adding different greens, different types of onions, pickled or pickled cucumbers, hot or sweet mustard, etc. The dish will be an excellent side dish for meat or fish.
