To prepare the Bounty recipe
you will need:
Coconut flakes 60 g
Coconut cream 60 ml
Erythritol 50 g
Sugar-free dark chocolate 60 g
Combine shavings, cream, and erythritol in a small bowl until you get a thick but crumbly consistency. The coconut filling should stick together, but should not be watery or too dry.
Tamp the coconut filling into rectangular silicone molds.
Leave a small space on top for the chocolate (about 5 mm).
Chill the coconut filling in the refrigerator for 30 minutes.
While the coconut filling is cooling, melt the chocolate in a water bath. Pour it into filled tins and chill again for 30 minutes.
Remove the chocolate-bottomed coconut filling from the silicone mold and place on a baking sheet (lined with parchment paper) or wire rack. Pour the rest of the melted chocolate over the coconut bars and chill again for 30 minutes.
