2 – 2.5 glasses of flour
1 teaspoon of baking powder
1 teaspoon of salt
1 tablespoon of butter
2 cups sugar
2 eggs
400 grams of ricotta cheese (or cheddar curd / sweet curd)
3 tablespoons of lemon juice
1 grated lemon peel

Do not neglect to use the flour by sifting it. If you have time, let the cookie dough rest in the fridge.

How to Make Lemon Cookie Recipe?
Preheat oven to 160 degrees.

In a bowl, combine the flour, baking powder and salt.

In another bowl, whisk the butter and sugar with a mixer until it becomes creamy.

Add the eggs one by one and mix well after each addition.

After adding the cheese, lemon juice and lemon zest, mix well.

Finally add the dry ingredients and mix until the flour disappears.

Spread baking paper on 2 baking trays.

In the cookie dough, take 2 tablespoons of pieces and flatten them and place them on a baking tray.

Bake in preheated oven for 15 minutes
