Soft gingerbread cookies


Delicious gingerbread cookies for Christmas. Decorated with lemon icing. The dough is brilliant, it kneads and rolls very well, it does not stick, baking takes 10-12 minutes for one serving and the gingerbread cookies are ready for Christmas. They do not need aging as they are immediately soft after baking. They store very well even in an open container. You can bake a few days before Christmas and for more busy people even the day before or even on Christmas Eve. The gingerbreads can also be prepared for hanging on the Christmas tree, then before baking, remember to make a small hole, e.g. with a water straw. Portion for 4 oven trays (about 60 cookies), baked at intervals, because they will get even bigger during baking and it would be better if they did not stick together. I would highly recommend!
CAKE
50 grams of wheat flour
1 cup of real honey (e.g. linden)
3/4 cup of sugar
15 grams of butter
1 egg
1 teaspoon of baking soda
pinch of salt
2 tablespoons of gingerbread spice (15 g)

FROSTING
1/2 cup powdered sugar
1 tablespoon of hot water
1 tablespoon of lemon juice
Preparation:
The ingredients should be at room temperature.

Heat the honey, sugar, butter and gingerbread spice until the ingredients are completely dissolved. Do not boil, stir occasionally. Cool.

Mix the flour with salt and baking soda, add the beaten egg and the cold honey mixture. Make a smooth dough (it will be thin and sticky, but it should be). Put in the fridge for 2 – 2.5 hours.

Remove the dough from the refrigerator and divide it into 4 parts.

Sprinkle the pastry board with a little flour (just enough that the dough does not stick to the board, not too much, because the gingerbreads will turn out harder). Roll out one part of the dough to a thickness of about 0.5 cm. Use molds to cut out various shapes of gingerbread cookies, place them on a baking sheet lined with baking paper, at intervals of approx. 1 cm, as they will still grow.

Bake in a preheated oven to 180 degrees C for 10 – 12 minutes. Prepare more cookies from the rest of the dough.

Cool and decorate with icing.

Frosting:
Thoroughly rub powdered sugar, hot water and lemon juice with the outside of the spoon. Adjust the icing density by adding powdered sugar (denser icing) or hot water / lemon juice (thinner icing).
