Ramadan fig and date cake

7oz chopped dates
7oz chopped figs
2oz unsalted butter
1 and half tsp bicarbonate of soda
250ml boiling water
4oz soft brown sugar (or any sugar)
3oz chopped/broken up walnuts
2 eggs
3oz plain flour
3oz wholemeal flour
1/2 tsp baking powder
pinch salt

dates, figs, butter, bicarb into a bowl, add the boiling water and let it stand for 15mins. Meanwhile prepare your tin and preheat oven to 175c/gas 3. Add sugar, walnuts, eggs to mix – make sure it’s cooled down enough or eggs will scramble! Add flours, b.powder, salt into mix. Stir until just blended. Pour into tin, bake for about 1hr. Cool for 10mins before turning out.

Sweet, sticky and delicious. Lots of natural sugar, lots of energy. Great for fasting, for pregnancy and breastfeeding too. For anyone!net
