Peppermint Cookies

1/2 cup shortening
1 egg
1 teaspoon peppermint extract
1 (18.25-ounce) package devil’s food cake mix
1/2 cup crushed peppermint candies
Preheat oven to 350 degrees F. In medium bowl, beat shortening, egg
and peppermint extract until smooth and creamy. Stir in cake mix. Dough
will be crumbly. Shape teaspoonfuls of dough into balls and place 2
inches apart on parchment paper lined cookie sheets. Press with bottom
of glass to about 1/4 inch thick. Bake 8 to 10 minutes or until cookies
start to crack. Remove cookies from oven; immediately sprinkle 1/8 to
1/4 teaspoon crushed peppermint candies on top. Press candy into soft
cookie. Cool on wire cooling racks. Makes about 2 dozen.
