1 cup shortening
1 cup granulated sugar
1 cup dark molasses
2 teaspoons baking soda
2 tablespoons hot water
4 cups all-purpose fl our
2 teaspoons ground ginger

In large bowl, cream shortening and sugar; mix in molasses. In small bowl,
dissolve baking soda in water; add to molasses mixture. Mix in eggs. Combine
fl our and ginger; stir into molasses mixture. Chill dough for 1 hour.
Preheat oven to 375 degrees F. Roll dough 1/4-inch thick on lightly fl oured
surface. Cut with fl oured cookie cutters; sprinkle with sugar, if desired. Bake
on ungreased cookie sheets at 375 degrees for 10 to 12 minutes. Cool on
wire cooling racks. Makes 3 to 4 dozen.
