Christmas ham

1 Ham Soaked in cold water over night
– 1 carrot (sliced)
– stick celery (sliced)
– 4 bay leaves
– 1 onion peeled & sliced (personally I’d just half the onion)

For the Glaze:

2 tblsp cloves
2 tblsp brown sugar
2 tblsp mustard (English or Dijon, ça depende un peu ton goût)
3 tblsp honey
1 bottle cider (the silly tossers don’t specify size)


Place ham in large pot of cold water, add other ingredients and boil. Simmer and cook for 15 mins/lb approx. Leave to cool in its liquid. Remove ham. Remove excess fat but leave 1/2 inch. With sharp knife, make incisions in criss cross formation. Brush with mustard. Stud with cloves and sprinkle with brown sugar and honey.
