Two good salads

These are recipes for two good salads.

Mimosa salad

Ingredients:
5 medium boiled potatoes,
5 pickles,
300 grams of ham (finely chopped),
3 poached eggs,
1 can of sweet corn,
sour cream (2 deciliters),
1 large mayonnaise (250 grams),
parsley leaves for decoration
salt to taste

Preparation:
Mix sour cream and mayonnaise. Grate a row of potatoes in a bowl, add salt to taste, pour over the dressing, squeeze a little with a spoon so that the dressing gets between the potatoes. Then sprinkle with ham and corn, grate cucumbers and eggs.
Repeat this process until there are toppings, and the top order should be corn and cucumbers, ham and eggs. If desired, decorate with a parsley leaf.
This salad is excellent with all kinds of roasting, with steaks, with fish.
It is very decorative if the bowl is lined with aluminum foil, and the finished salad is turned out onto a shallow plate covered with a lettuce leaf.

And now, my version of Cold Chicken Salad.

Cook 2 pieces of chicken breast in water with a little oil and spices, salt and pepper…Cut into cubes,
put in a bowl and add 2 diced pickles and 3 diced boiled eggs. If it’s spring onion time, cut it too, if there are no spring onions, then a regular red onion, 1 smaller one cut into cubes. Mix this in a bowl and add 4 spoons of mayonnaise, 4 spoons of sour cream, a little pepper, a spoonful of red pepper powder and a little salt.
