Creamy pasta with vegetables Ingredients:

400 grams of whole pasta,

2 onions,

2 green peppers,

1 eggplant,

1 young zucchini,

2 tomatoes,

1 clove of garlic,

50 grams of grated Emmental cheese,

oil, dry spices, pepper, salt.

Method of preparation:

Fry chopped onion and garlic in hot oil, then add cleaned and sliced peppers, peeled zucchini, diced tomatoes and eggplant. Sauté until the liquid from the vegetables evaporates. Salt, pepper and sprinkle with dry spices.

In the meantime, cook the pasta (10 min.) in plenty of boiling water and drain. Then shake the pasta on the heated oil and stir to coat evenly.

Then combine the stewed vegetables and the cooked pasta and mix gently on the fire. Pour into a serving dish and sprinkle with grated Emmental cheese.
