Tomato Rice with Black Beans
INGREDIENTS: 1 cup chopped onions 3 cups chopped fresh tomatoes 1½ cups frozen peas 6 tablespoons extra virgin olive oil 2 teaspoons sea salt ¼ teaspoon freshly ground black pepper 1½ tablespoons turmeric 15 ounces canned black beans 5½ cups short grain brown or wild rice blend, cooked
DIRECTIONS: 1. In a large saucepan combine the onions, tomatoes, peas, oil, sea salt, and pepper. Cook over medium high heat, covered, for 5 minutes until it thickens. 2. Stir in the turmeric, beans, and rice and heat through 5 minutes. 3. Serve.
