Apple Goji Walnut Millet  


INGREDIENTS: 1 cup millet 4½ cups water ½ cup unsweetened almond milk ½ cup chopped walnuts ½ cup chopped dried apple rings ¼ cup maple syrup ¼ cup goji berries

DIRECTIONS: 1. Cook 1 cup millet in 4½ cups water in a medium-sized saucepan over moderate heat for 30 to 35 minutes.  2. Reduce heat to low and add almond milk, walnuts, apples, maple syrup, and goji berries. Cook for an additional 5 minutes.  Nuts and seeds are great brain food. They provide beneficial amounts of “intelligent” fat, the kind your body can process into healthy energy. Further, nuts and seeds are an excellent source of zinc, an essential mineral. The zinc found in these foods was removed from the soil and incorporated into living plant tissue, which make it absorbable and us- able by the body’s metabolism. The United States Recommended Daily Allowance (RDA) for adults is 15 mg per day. Nuts are on the lower end of the glycemic spectrum; thus, in addition to being a versatile ingre- dient, they are also a great snack for those with diabetes.  Some of the best nuts: walnuts, almonds, pine nuts, and pistachios. Some of the best seeds: sunflower, hemp, flax, sesame, and chia. (Wal- nuts, flaxseeds, and chia seeds are also high in omega-3 fatty acids, which are highly beneficial for those with chronic inflammatory dis- eases and circulation problems.)
