Healthy Sweet Snack

Healthy Sweet Snack ingredients:

1 cup of whole wheat flour (can be white or mixed),
1/3 cup oatmeal,
1/2 teaspoon of finely ground sea salt,
1/3 cup + 1 tablespoon of butter, coconut oil or olive oil,
2 spoons of maple syrup,
2 tablespoons of demerar sugar,
1/4 teaspoon of sesame oil,

1 cup of Greek yogurt (it means slightly thicker yogurt),
1/4 cup maple syrup,
grated rind of one lemon,
3 teaspoons of freshly squeezed ginger juice,
2 eggs lightly beaten,

candied ginger, dried fruit or fresh fruit for topping

Healthy Sweet Snack method of preparation

In a medium bowl, mix the flour, oatmeal and salt. Melt the butter at a low temperature and mix the maple syrup and sugar into the butter. Now add the flour and oat mixture to the butter and mix well. Let it be on the fire for a short time until it gets a slightly toasted smell. Add sesame oil and remove from heat. Pour the mixture into the pan (round for a tart) and press it into the bottom and edges of the pan with your fingers. Freeze it in the fridge for 5 to 10 minutes.

In the meantime, make the filling, combine yogurt, maple syrup, lemon peel, ginger juice. Try it! Add more ginger juice as desired and to taste. Now add the eggs and mix well to make an even mixture.Heat the oven to 180 degrees Celsius.

Fill the tart and don’t worry if there is more mixture. Bake for 20 to 25 minutes. The filling should firm up a bit, it should not be liquid.
Remove from the oven and cool for about 10 minutes. After that, put it in the fridge for a few hours and serve it with crystallized ginger, fresh or dried fruit.

You can make ginger juice in a juicer or grate it very finely and squeeze as hard as you can.
