Preserved Lemons 

Preserved Lemons ingredients:
Lemon,
Olive oil,
Water,
Salt.

Preparation
Wash the lemon, rub it well, cut it into four parts, but do not cut it completely (like a rose when it blooms). Salt each quarter of the lemon well and collect it again into one whole. Put the prepared lemon in a clean, sterilized jar, arrange the first row and cover each lemon with 3 teaspoons of olive oil. Continue sorting (the process is the same)
as long as there are places in a jar. Cover with hot, boiled water (up to the top), close with an airtight seal and leave to stand in a cool place for 6 weeks before use. A cold place means a basement or a cold pantry, not a refrigerator.

P.S. A lemon prepared in this way can be kept for 15-18 months, and before use, rinse the slices with cold water. It is excellent for dishes that require the use of lemon as an addition.
