WAFERS FROM A NUN
For the crust:
5 egg yolks
200 g of sugar
200 g of ground walnuts
5 egg whites (snow)
4 small wafers or 2 large wafers, then cut across
For the filling:
200 g of butter
150 g of powdered sugar
2 egg yolks
2 dl of milk
2-3 tablespoons of brewed coffee
2 tablespoons of
flour ground walnuts for sprinkling
Beat egg yolks and sugar until foamy in steam until they thicken (about 15 min.)
Alternately add beaten egg whites and walnuts to the cooled mixture.
Spread the dough on all 4 wafers and bake at 150 degrees for about 20 minutes.
Beat butter and egg yolk until foamy and add 2 egg yolks.
Take 1/2 dl from 2 dl of milk and add flour and coffee to it, and put the rest of the milk to boil.
When it boils, boil with the remaining 1/2 dl and cook like a pudding and leave to cool.
Mix in the cold cream with butter and mix well.
Spread on all 4 wafers, stack them one on top of the other and sprinkle the top one with ground nuts.
